Jacoby retired from Boise State in 1997 after 24 years as head track & field coach. He was the head of the physical education department and track coach at College of the Canyons in California from 1969 to 1974 and a high school track coach from 1962 to 1969. He is the author of three books on track & field and historian of the Nez Perce Indian Tribe. He was three-time NCAA District Coach of the Year and Big Sky Conference Coach of the Year ten times. He was high jump coordinator for USA Track & Field for eight years and a member of the staff for three USA national teams, including the 1992 Olympic team.
